FAB FINDS...

MOST RECENT PURCHASES...



I must say, shopping online has been super fun this spring season! There are so many trendy fashion forward pieces to select from. I received my lime green trench from Evans London today and I must say this lightweight trench is EVERYTHING! I am in love with this trench! I'm not a newbie with Evans; however, I never purchased from Eloquii (but I did received my strappy dress this week and I adore it!)or Boohoo and I am equally excited to see what these online retailers have to offer.  Hope you feel inspired!

FUN TIMES


I finally got to attend the prom at the age of 33!!! I must admit, attending the Y Roads Benefit Gala (and working) was so much fun. The event was for my students so they could learn how to raise funds for a cause, St. Jude's Hospital. I had a bast, probably more fun than my teenage and young adult students!

POSH EATING

Lasagna Roll-Ups
















This tasty treat is my go to recipe for all things fabulous. I really enjoy making lasagna roll-ups. Since I eat veggies, I replaced the ground beef with spinach (my boyfriend gave me this idea!) and I kept everything else. I'm not a hardcore vegan so I need my cheese/dairy products. Also, I never use spaghetti sauce because it contains too much sugar. Instead, I incorporate marinara, a light and airy sauce with a rich tomato palate.

Here is the recipe below:

Ingredients
12 lasagna noodles
2 cups ricotta cheese
1 egg
1/4 cup chopped parsley
2 cups shredded mozzarella cheese, divided
1 cup of spinach
1 (28-ounce) jar of marinara sauce, divided

Preparation:
Preheat the oven to 375 degrees
Cook noodles according to package directions
Drain noodles and rinse with cold water
Mix ricotta, egg, parsley and 1 cup mozzarella in a bowl; set aside

Cook spinach in a boiling pan over medium heat  then drain
Spread 1/2 cup sauce in a 9 x 13-inch baking dish
Spread 3 tablespoons ricotta mixture on each noodle; top with some spinach
Roll up each noodle  ( this is the fun part!)
Arrange seam sides down in baking dish

Top roll-ups with remaining sauce and mozzarella
Bake, loosely covered, for 15 minutes
Remove cover, bake for 10 minutes longer or until brown and bubbly
